HEALTHY FRIED RICE in 10 MINUTES
prep time: 15 min: cook time: 10min total time 25 min! An amazingly healthy twist on takeout fried rice and you can’t even tell that it’s 50% is cauliflower rice. And So EASY to make!
Ingredients
Prep and lay out all ingredients before you start
- 2 cups pre-cooked brown rice (can use a pack of precooked microwave brown rice to save time)
- 2 tablespoons tamari (naturally fermented) or soy sauce
- 1 tablespoon sesame oil
- 3 tablespoons vegetable oil (I prefer Safflower)
- 1 tablespoon freshly grated ginger
- 1/2 teaspoon five-spice-powder
- 2 large eggs
- 2 large cloves garlic, minced
- 1 onion, diced
- 2 carrots, peeled and finely diced
- 3-4 mushrooms finely chopped
- 1 cup chopped broccoli florets
- 1/2 cup frozen peas thawed
- 2 cups riced cauliflower
- 2-3 green onions / scallions, thinly sliced (set aside for garnish)
- 1 teaspoon sesame seeds (set aside for garnish)
- 1/4 cup fresh cilantro chopped (set aside for garnish)
Directions
- Heat 3 tablespoons vegetable oil in a large skillet or wok over high heat.
- Stir in 5-spice powder
- Add onion, carrots, mushroom & broccoli to the skillet stirring often, about 2-3 minutes
- Stir in minced garlic then add riced cauliflower, peas stirring constantly for another 1-2 minutes.
- Add tamari, ginger and toss.
- Stir in rice and cilantro then add eggs. Continue to toss rice/veggie blend till egg is cooked about 3-4 minutes.
- Garnished with sesame seeds; Serve immediately,
Notes
This makes a perfect side dish or, you can add in 2 cups of diced chicken meat for a main dish. Serve with vegetable spring rolls and Chinese mustard.
