A Very Happy Raw Brownie

THE VERY HAPPY RAW BROWNIE

Ingredients: · 2 cups walnut halves or whole · 2 ½ cups Medjool dates, pitted · 1 cup raw cacao (unsweetened cocoa) · 3/4 cup unsalted almond slices · ¼ tsp. sea salt Directions: 1. Place walnuts in food processor and blend on high until the nuts are finely ground. 2. Add the cacao and salt. Pulse to combine. 3. Add the dates one at a time through the feed tube of the food processor while it is running. The texture should be crumbly but still moist so that when pressed, it will easily stick together. If it’s too dry, add a few more dates. 4. Pulse in the chopped almonds until combined. Press mixture into a parchment lined pan. Place in fridge to set (for @ an hour) or until ready to serve (it is also easier to cut these when they are very cold). Store in an airtight container up to one week (if you can keep them that long :) This recipe is loaded with fiber that benefits your digestive health, regulates blood sugar, and can help lower cholesterol and triglycerides. It is rich in Omega-3 essential fatty acids (from the walnuts) that nourish your brain, moisten the stools and help reduce inflammation. The dates are loaded with minerals such as magnesium, zinc, potassium, iron as well as a great source of vitamin B6. Cacao is a rich source of B vitamins, magnesium, iron and per measured unit, is higher in calcium than milk. Cacao is also one of the top "superfoods" as its antioxidant level is 40x higher than blueberries!
