Beets have an incredible health profile and can be an easy and delicious addition to many meals. I love adding these pickled beets to salads, grain bowls, as a side or a pick me up snack. Beets are high in fiber, B9 (folate), manganese, potassium, iron and vitamin C. Beets are rich in antioxidants that can protect from cell damage and promote heart health. The phytonutrient (plant compounds) Betalains is known for its ability to reduce inflammation, as an anti-tumor, promote liver health and can aid in digestion. So, like your mama told you: "eat your beets". Fortunately, you no longer need to eat hers (love you mom)
