This recipe was gifted to me by one of my lovely former students Jen Thomas. I dubbed it "Tommy bread" because she was so generous to bring enough to share thereby ensuring her name would always be attached to this delicious and sooo simple recipe. It's made with oats and no flour so, it's gluten free and can be toasted and jazzed up with a smear of almond butter and Tommy's chia seed fruit jam
Easy Oatmeal "Tommy" Banana Bread: This recipe is the BOMB!!!! it is completely gluten free! It is SOOoooooo easy to make and fast! Prep time is literally under 10 minutes and bake time @30minutes. Add extra nutrition and flavor by adding a spoonful of Fruity Chia Jam (recipe included). Always best to use top quality ingredients and organic when possible
Pre-heat oven to 350 degrees
Ingredients:
Rolled Oats: 2 cups
Bananas: 3 small-medium or 2 large-extra large bananas
Eggs: 2
Maple Syrup: 1/4 cup
Baking soda 1 teaspoon
Pure Vanilla: 1 teaspoon
Spice: 1/4 teaspoon I like pumpkin pie spice but straight cinnamon is delicious too
Lightly oiled loaf pan: parchment paper may be used for easy removal.
Preparation: Place all ingredients into a food processor or large blender. Blend until mostly smooth. Pour batter into oiled pan and place in pre-heated oven. Check bread in 30 minutes by inserting a toothpick till clean. Allow additional 5 minutes if needed. Allow to cool and remove from pan. Slice and enjoy with Fruity Chia Jam
NOTE: For Pumpkin Bread Option: replace banana with 3/4 cup pumpkin puree and increase maple syrup to 1/3 cup
Fruity Chia Jam:
Berries: 3 cups (blueberries, raspberries, blackberries are all good choices)
Honey or Maple syrup: 1/4 cup
Chia Seeds: 2 Tablespoons
Vanilla Extract: 1 teaspoon
Instruction: simmer berries and sweetener for about 5 minutes then mash with fork. Add chia seeds and simmer additional 20 minutes on low heat while stirring frequently.
Transfer to jar and refrigerate. Jam is ready to use when cool :)
